A tasty, quick appetizer when you prefer your bacon crispy every time.
Ingredients:
- 5 slices of bacon
- Salt & pepper
- 18 sea scallops
- 2 tablespoons olive oil
- 4 scallions chopped
Preparation Method:
- Brown bacon until crispy either in a pan or microwave; crush into small bits, then set aside.
- Preheat a non-stick pan to high heat for scallops.
- Season scallops with salt & pepper.
- Add 1 tablespoon of olive oil to a very hot skillet. Make sure the base of the pan is covered.
- Place 9 scallops, an inch apart.
- Sear scallops for 2 minutes on each side or until caramelized and opaque.
- Transfer to a plate and cover loosely with foil.
- Repeat with the remaining scallops.
- Place scallops on a large platter and scatter the scallions and bacon bits all over, and then enjoy.
