Scallops, Bacon & Scallions

A tasty, quick appetizer when you prefer your bacon crispy every time.

Ingredients:

  • 5 slices of bacon
  • Salt & pepper
  • 18 sea scallops
  • 2 tablespoons olive oil
  • 4 scallions chopped

Preparation Method:

  1. Brown bacon until crispy either in a pan or microwave; crush into small bits, then set aside.
  2. Preheat a non-stick pan to high heat for scallops.
  3. Season scallops with salt & pepper.
  4. Add 1 tablespoon of olive oil to a very hot skillet. Make sure the base of the pan is covered.
  5. Place 9 scallops, an inch apart.
  6. Sear scallops for 2 minutes on each side or until caramelized and opaque.
  7. Transfer to a plate and cover loosely with foil.
  8. Repeat with the remaining scallops.
  9. Place scallops on a large platter and scatter the scallions and bacon bits all over, and then enjoy.
