Baked Cheese Corn

An unlikely but delicious side-dish for any holiday roast meal.

Ingredients:

  • 3 x 14-ounce cans of sweet corn, drained
  • 2 level tablespoons of flour
  • 2 tablespoons unsalted butter
  • 3/4 cup milk
  • 4 cheese slices (we use American)
  • 1/4 teaspoon salt
  • 1 teaspoon cayenne pepper
  • Paprika

Preparation Method:

  1. In a medium-sized saucepan, over medium heat, melt butter.
  2. Add flour and mix well.
  3. Slowly add milk, a little at a time, until the mixture is smooth.
  4. Add 4 cheese slices and mix until the cheese is melted.
  5. Add salt, cayenne pepper, and corn and mix well.
  6. Pour mixture into a casserole dish; Sprinkle paprika over the top for color.
  7. Bake in a 375°F oven. oven for 30 minutes or until the mixture is bubbly.
