Arrabiata Sauce

This is a simple yet delicious red sauce to go with pasta. You can also use it as a topping for your chicken parmigiana. I even use it as a base for my pizza…so many uses for this tasty tomato sauce.

Ingredients:

  • 1/4 cup olive oil
  • 6 garlic cloves, peeled & pressed
  • 3 x 14-ounce cans of tomato sauce
  • 1 x 14 ounces  can of chopped tomatoes
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon crushed red pepper flakes

Method:

  1. Heat the oil in a large saucepan over medium heat.
  2. Add the garlic and cook until lightly browned, about 2 minutes.
  3. Carefully slide the tomatoes and their liquid into the oil.
  4. Bring to a boil and season lightly with salt and crushed red pepper, oregano, and sugar.
  5. Lower the heat so the sauce gently simmers and cooks.
  6. Stir in the basil for about 5 minutes before the sauce is finished.
  7. Taste the sauce and season with more salt and red pepper if necessary.
