Strawberry Puffs

The easiest dessert to make and always is a hit with family and friends.

Ingredients:

  • 1 sheet of frozen puff pastry (I use Pepperidge Farm)
  • 1 small 3 oz box of vanilla instant pudding & pie filling (I use Jello)
  • 1 cup milk
  • 1 container of frozen Cool Whip, thawed, or 1 cup whipped cream
  • Sliced strawberries
  • Confectioners sugar

Method: Preheat oven to 400°F

Thaw the puff pastry either overnight in the fridge or on your counter until soft enough to unfold and use. Divide the sheet into 3 strips using the folded lines as a guide. Cut each strip into 4 rectangles. Place the pieces on a baking sheet and bake in the oven for 15 minutes. Let them cool for about 10 minutes on a wire rack. Then slice each puff in half to create a top and bottom.

Pour the milk into a bowl and whisk in the Jell-O mix. Then add the thawed Cool Whip or cream and blend well.

Spoon some of the creamy mixture onto the base of your puff. Add a few slices of strawberries. Then add the pastry top. Repeat with the remaining puffs. Sprinkle confectioners’ sugar over the tops before serving.

If you are not planning on eating all the puffs, do not assemble until needed. You can store the baked puffs in a container in the cupboard. The whipped mixture and fruit should be stored in the fridge. Feel free to try other fruits if you prefer.
