Anytime anyone is feeling unwell this soup cures them!
Ingredients:
- 1 rotisserie chicken
- 2 tablespoons butter
- 1 large onion chopped
- 2 carrots sliced
- 1 long celery stick chopped into small pieces
- 1 clove of garlic pressed
- 2 x 32 ounces Chicken broth
- 1 small can of condensed chicken soup
- 1 small can of sweet corn drained
- salt and pepper
Preparation Method:
- Sauté onions, carrots, and celery in butter until onions are golden and soft.
- Take all the meat off the rotisserie chicken. Dice it into small pieces. Add it to the sauteed vegetables.
- Add the garlic and cook for a couple more minutes.
- Add the condensed chicken soup and the chicken broth mixing well and bring to a boil. Turn down the heat and simmer for about 40 minutes.
- Add the can of sweet corn and cook for another 10 minutes or so.
- Season with salt and pepper to your taste.
- You can add cooked pasta, noodles, or rice to the finished soup before serving.
