Cure all Chicken Soup

Anytime anyone is feeling unwell this soup cures them!

Ingredients:

  • 1 rotisserie chicken
  • 2 tablespoons butter
  • 1 large onion chopped
  • 2 carrots sliced
  • 1 long celery stick chopped into small pieces
  • 1 clove of garlic pressed
  • 2 x 32 ounces Chicken broth
  • 1 small can of condensed chicken soup
  • 1 small can of sweet corn drained
  • salt and pepper

Preparation Method:

  1. Sauté onions, carrots, and celery in butter until onions are golden and soft.
  2. Take all the meat off the rotisserie chicken. Dice it into small pieces. Add it to the sauteed vegetables.
  3. Add the garlic and cook for a couple more minutes.
  4. Add the condensed chicken soup and the chicken broth mixing well and bring to a boil. Turn down the heat and simmer for about 40 minutes.
  5. Add the can of sweet corn and cook for another 10 minutes or so.
  6. Season with salt and pepper to your taste.
  7. You can add cooked pasta, noodles, or rice to the finished soup before serving.
