Ingredients:
- 1 1/2 lbs (about 5) potatoes, peeled and cut into halves and then quartered.
- 8 ounces green cabbage, very finely sliced or shredded
- 12 spring onions, trimmed and very finely sliced
- 6 tablespoons butter
- 1/2 cup full-fat milk
- salt and pepper
Preparation Method:
- Put the potato chunks in a large saucepan. Then pour boiling water over them. Add 1 dessertspoon of salt. Put on a lid and simmer gently until they are absolutely tender (15 to 20 minutes).
- Melt 2 tablespoons of butter in a large frying pan. Sauté the cabbage for about 3 minutes. Keep it on the move until it’s tender and slightly golden at the edges. Then add the chopped spring onions and continue to cook for another minute.
- Next, drain the potatoes, and return them to the pan. Now, mash the potatoes with 4 tablespoons of butter, then add the milk and continue mashing. Add the sauteed cabbage to the pot and, with a fork, swish it together until everything looks well mixed. Taste and add more salt and pepper if needed.
- You will have to judge if more butter or milk is needed to make them smooth and fluffy-looking.
