Colcannon (Irish) Mashed Potatoes

Ingredients:

  • 1 1/2 lbs (about 5) potatoes, peeled and cut into halves and then quartered.
  • 8 ounces green cabbage, very finely sliced or shredded
  • 12 spring onions, trimmed and very finely sliced
  • 6 tablespoons butter
  • 1/2 cup full-fat milk
  • salt and pepper

Preparation Method:

  1. Put the potato chunks in a large saucepan. Then pour boiling water over them. Add 1 dessertspoon of salt. Put on a lid and simmer gently until they are absolutely tender (15 to 20 minutes).
  2. Melt 2 tablespoons of butter in a large frying pan. Sauté the cabbage for about 3 minutes. Keep it on the move until it’s tender and slightly golden at the edges. Then add the chopped spring onions and continue to cook for another minute.
  3. Next, drain the potatoes, and return them to the pan. Now, mash the potatoes with 4 tablespoons of butter, then add the milk and continue mashing. Add the sauteed cabbage to the pot and, with a fork, swish it together until everything looks well mixed. Taste and add more salt and pepper if needed.
  4. You will have to judge if more butter or milk is needed to make them smooth and fluffy-looking.
