We had a craving for Chicken Tikka and so came up with our own version to make at home. The secret to the great flavor is to marinate the chicken overnight and it also helps to tenderize the meat.
We used 2 large chicken breasts on the bone. I removed the skin and any other fatty bits. Cutting each breast into 3 parts I then cut into the flesh to make openings for the marinade to seep into while resting in a container with a lid
For the marinade I blended it together in a food processor;
- 4 tablespoons of yogurt
- 3 garlic cloves
- a small lump of fresh ginger
- 1 hot green pepper
- 1 tablespoon hot paprika
- 1 heaping teaspoon of *Chaat Masala Spice
- 1 heaping teaspoon of salt
- Make sure everything is well blended together. Rub it all over the chicken. Make sure to get in all the nooks and crannies!
- Cover and leave overnight in the fridge. In the morning, move the chicken around to make sure all of it has soaked in the marinade. Then, return it to the fridge.
- Fire up your grill and when ready grill the chicken for about 8-10 minutes on each side. You can take the largest piece off. Cut it open by the bone. This ensures your chicken is cooked and not still pink.
- *you can use any blend of Indian spices (garam masala or tandoori spice)
