These cookies are a family favorite; try freezing and then enjoy them with a hot cup of tea.
Ingredients:
- 2 1/4 cups all-purpose flour (274 grams)
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 sticks unsalted butter (12 tablespoons), softened
- 1/4 cup butter shortening
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon of ground cinnamon and 3 tablespoons of sugar mixed together for rolling cookies
Preparation Method:
- When ready to bake heat oven to 400°F.
- Line a cookie sheet with parchment paper.
- Whisk flour, cream of tartar, baking soda, and salt together in a medium bowl; set aside.
- With an electric mixer on medium speed, cream butter, shortening, and 1 ½ cups sugar for 2-3 minutes. Mix until the mixture looks pale, fluffy, and increased in volume.
- Add eggs, 1 at a time and mix well for about 20 seconds each.
- Add dry ingredients and beat at low speed until just mixed.
- Transfer dough into a container with lid and leave in the fridge to set for a few hours. (I leave mine overnight).
- Working with a scant 2 tablespoons of dough each time, roll the dough into balls (about 1 ounce each ball)
- Mix the remaining 3 tablespoons of sugar with cinnamon powder in a shallow bowl.. Roll balls in cinnamon sugar and place on a cookie sheet about 2 inches apart.
- Bake the cookies until the edges are beginning to set. The centers should stay soft and puffy. Bake them for 9-10 minutes.
- Let cookies sit on the cookie sheet for 2 minutes before transferring them to wire racks. Should make around 30 cookies
