Philly Chicken-steaks

When I couldn’t find the same meat used to make a Philly Cheesesteak, I came up with a tasty (healthier?) chicken version.

Ingredients for 2 sandwiches:

  • 1 lean chicken breast sliced into thin strips
  • 1 medium onion sliced thin
  • 1 jalapeno pepper sliced thin
  • 8 ounces of mushrooms sliced
  • Olive oil
  • Salt and pepper
  • Bean sprouts (optional)
  • Swiss Cheese Slices
  • 2 long shaped rolls

 Preparation Method:

  1. Sauté onions, jalapeno, and mushrooms until soft and golden in a couple of tablespoons of olive oil.
  2. Add chicken, salt, and pepper, and cook until done, about 10 minutes. Make sure to toss the chicken about occasionally so cooked and browned on all sides.
  3. If you want an extra crunch, toss in a couple of handfuls of bean sprouts.
  4. Add a slice or two of Swiss cheese over the mixture. Pop the lid on, or cover it with a plate. Then, turn the heat off.
  5. Heat the rolls in the oven until crisp,y then scoop out the chicken mixture into the middle. Cut in half and serve with your favorite crisps/chips. Sometimes I add spinach or use different cheeses to vary it up!
