Shrimp Avocado Sandwiches

Sometimes you just want to eat something yummy and quick for lunch or dinner….Ingredients for 2 sandwiches:

Preparation Method:

  1. In a small bowl mash the avocado with a little salt & pepper and a squeeze of lime juice and set aside.
  2. Slice open the rolls and spread each side with garlic butter then place under the broiler/grill and lightly toast.
  3. Spread one side of the toasted roll with the avocado and then top with the cooked shrimp.
  4. Sprinkle a little more black pepper and another squeeze of lime over the shrimps then add the other side of the roll, cut in half and enjoy!

*To make garlic butter, I use 2 tablespoons of unsalted softened butter to 1 clove of minced garlic and a pinch of salt.
