Quick Frittata

Ingredients:

  • 1 tablespoon olive oil
  • 2 shallots or 1/2 sweet onion sliced thin
  • 1 jalapeno sliced (optional)
  • 1 large tomato, diced
  • 8 ounces sliced mushrooms
  • 2 large handfuls of fresh baby spinach
  • 4 large eggs beaten together
  • 1 ounce grated/sliced Swiss cheese
  • salt and pepper

Preparation Method:

  1. In a large frying pan, saute the onions, jalapeno, and mushrooms until soft and slightly browned. Add the tomato and spinach and continue cooking until everything looks done. Add a little salt and pepper and mix well.
  2. Turn on your broiler/grill to high.
  3. Make sure everything is spread evenly over the base of the pan. Then pour in the eggs. Make sure to move the pan around so everything is covered with the beaten eggs. Sprinkle the cheese over the top and let the bottom of the frittata cook for a couple of minutes.
  4. Give the pan a jiggle. When the eggs are nearly set, turn off the stove top. Place the frying pan under the broiler to cook the top.
  5. It will only take a couple of minutes, so keep your eye on it. Once you see the top become golden brown and puff up, take it out. Make sure you use an oven glove so you don’t burn your hand on the hot handle. Then put it back on top of the oven.
  6. Allow to cool and set for a couple of minutes before serving.  Divide into 4 portions and enjoy!

You can make this with any vegetables you enjoy eating. Just make sure they are all about the same size. This will guarantee they cook evenly.
