Roasted Mixed Vegetables

These are great to eat with grilled or roasted meats….


  • 2 parsnips, peeled and cut in half lengthwise
  • 2 carrots, peeled and cut in half lengthwise
  • 1/2 onion cut into 4 wedges
  • 1/2 cauliflower broken into largish pieces
  • 2 potatoes, peeled and quartered
  • olive oil
  • salt and pepper

Preparation Method:

  1. Preheat oven to 400 degrees F and line a baking sheet with foil
  2. Add all your vegetables to the baking sheet and sprinkle with salt and pepper
  3. Drizzle some olive oil over everything and toss together so all the vegetables are covered with the oil and seasoning.
  4. Place in oven and roast for about 30 minutes.  Check at 15 minutes and turn the veg over to brown all sides.

You can roast any combination of your favorites; just make sure they are about the same size and thickness so they all cook together.
