Cucumber Salad

Refreshing and light….


  • 1 English (hothouse) cucumber, peeled and sliced as thin as possible (I used a mandolin slicer)
  • 1 very thin slice of onion chopped into small pieces
  • 1 teaspoon chopped chives, dried or fresh
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • pepper to taste

Preparation Method:

Mix all ingredients together in a bowl adding a pinch or two of pepper and leave in the fridge for at least 1-3 hours before serving (tastes better the more chilled it is).
