Ingredients:
- 3 tablespoons oil
- 1 large onion sliced thin
- 4 garlic cloves crushed
- 1 hot green chili sliced
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon Garam Marsala
- 1 teaspoon salt
- 4 x white fish fillets cut into bite-sized pieces
- 1 cup chopped tomatoes
- 1 cup broth – chicken or vegetable
Preparation Method:
- Heat the oil in a large pan. Sauté onions until they are brown and golden. Then, add the green chili and garlic. Cook for a few minutes more.
- Mix all the dry spices and then sprinkle over the onion mixture and cook for a minute or two.
- Add the pieces of fish and gently move them around so they are coated with the mixture.
- Pour over the tomatoes and then add as much broth as needed to cover the fish and make a sauce.
- Give the pan a shake to make sure the pieces of fish are covered with the sauce.
- Cover the pan and cook on a simmer for about 4 minutes. Then give the pan a shake or gently turn the fish. Cook for another 10 minutes or so.
- Always taste before serving and add more salt if needed. Serve with your favorite dal, roti, or rice.
Occasionally, I will add shrimp, baby scallops, and diced potatoes. This makes it more of a fish stew. That tastes yummy as well!
