Ingredients:
- 1 small onion, finely chopped
- 1 small green chili, finely chopped
- 3 garlic cloves, finely chopped
- Extra virgin olive oil
- 1 small tin chopped tomato seasoned with garlic, oregano & basil
- 20 uncooked large shrimp
- Lemon juice
- White wine
- Salt/pepper to taste
- Crushed red pepper
- box of thin spaghetti
Preparation Method:
- Heat 2 tablespoons of olive oil in a large frying pan.
- Add onion, chili, and garlic, and saute until soft.
- Add shrimp and cook until the shrimp are pink.
- Add 1 teaspoon of lemon juice and a large splash of white wine.
- Cook over high heat until the alcohol has evaporated.
- Add a tin of chopped tomatoes and reduce the heat to low.
- Add salt and crushed red peppers to your own level of heat and taste.
- Cover the pan with the lid and cook slowly for 15 minutes.
- Bring a large pot of salted water to a boil and cook spaghetti as per instructions on the box.
- Add cooked pasta to the shrimp and toss together. Serve promptly.
