Shrimp Diablo

Ingredients:

  • 1 small onion, finely chopped
  • 1 small green chili, finely chopped
  • 3 garlic cloves, finely chopped
  • Extra virgin olive oil
  • 1 small tin chopped tomato seasoned with garlic, oregano & basil
  • 20 uncooked large shrimp
  • Lemon juice
  • White wine
  • Salt/pepper to taste
  • Crushed red pepper
  • box of thin spaghetti

Preparation Method:

  1. Heat 2 tablespoons of olive oil in a large frying pan.
  2. Add onion, chili, and garlic, and saute until soft.
  3. Add shrimp and cook until the shrimp are pink.
  4. Add 1 teaspoon of lemon juice and a large splash of white wine.
  5. Cook over high heat until the alcohol has evaporated.
  6. Add a tin of chopped tomatoes and reduce the heat to low.
  7. Add salt and crushed red peppers to your own level of heat and taste.
  8. Cover the pan with the lid and cook slowly for 15 minutes.
  9. Bring a large pot of salted water to a boil and cook spaghetti as per instructions on the box.
  10. Add cooked pasta to the shrimp and toss together. Serve promptly.
