Alu Andaa (Spicy Potato & Eggs)

Enjoy some spicy eggs and potatoes for a quick meal any time of the day….

Ingredients:

  • 6 large eggs beaten together
  • 2 small potatoes, diced into very small pieces
  • 1 medium sweet onion, diced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 jalapeno diced
  • 1 tomato chopped up
  • 1 teaspoon salt
  • 1 teaspoons turmeric
  • 1 teaspoon cumin
  • 1 teaspoon of hot chili powder

Preparation Method:

  1. In a large pan, saute onions and potatoes in olive oil and butter until browned, about 10 minutes.
  2. Add the jalapeno and continue cooking until soft.
  3. Add all the dry spices, mix well, and cook for a minute, then add the chopped tomatoes.
  4. Sauté for another 5 minutes or so until they look softened as well.
  5. Stir in the eggs and mix well with the potato mixture.
  6. Stir continuously as if you were making scrambled eggs.
  7. Once the eggs are cooked, transfer the mixture to a serving bowl and enjoy!
