Ingredients:
- 8oz butter softened (2 sticks)
- 2 cups packed light brown sugar
- 2 eggs at room temperature
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups quick-cooking oats
- 1 1/3 cups (8oz package) Heath Bits ‘O Brickle toffee bits
- 1 cup sweetened coconut flakes
Preperation Method:
- Heat oven to 375F and line a cookie sheet with parchment paper
- Beat butter, brown sugar, eggs, and vanilla until well blended.
- In a bowl sift together flour, baking soda, cinnamon, and salt and add to blended butter and mix together until blended.
- Stir in the oats, toffee bits, and coconut with a spoon.
- Drop by rounded teaspoons about 2″ apart onto the prepared cookie sheet.
- Bake for 8-10 minutes or until the edge is lightly browned.
- Cool for 1 minute before removing to wire rack to cool completely.
Should make about 2 dozen cookies
