Oatmeal Toffee Cookies

Ingredients:

  • 8oz butter softened (2 sticks)
  • 2 cups packed light brown sugar
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups quick-cooking oats
  • 1 1/3 cups (8oz package) Heath Bits ‘O Brickle toffee bits
  • 1 cup sweetened coconut flakes
  1. Heat oven to 375F and line a cookie sheet with parchment paper
  2. Beat butter, brown sugar, eggs, and vanilla until well blended.
  3. In a bowl sift together flour, baking soda, cinnamon, and salt and add to blended butter and mix together until blended.
  4. Stir in the oats, toffee bits, and coconut with a spoon.
  5. Drop by rounded teaspoons about 2″ apart onto the prepared cookie sheet.
  6. Bake for 8-10 minutes or until the edge is lightly browned.
  7. Cool for 1 minute before removing to wire rack to cool completely.

Should make about 2 dozen cookies
