Ingredients:
- 1½ cups flour
- 1 teaspoon. baking soda
- 1/2 teaspoon salt
- 1½ teaspoons cinnamon
- ½ teaspoon ground nutmeg
- 1 cup unsalted butter at room temperature
- 1 cup light brown sugar
- ½ cup white sugar
- 2 large eggs
- 1 ½ teaspoons vanilla
- 1¼ cups raisins
- 1 cup chopped pecans
- 3¼ cups old-fashioned rolled oats
Preperation Method:
- Pre-heat oven to 350 F and line cookie sheets with parchment paper
- In a medium bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a bowl of a stand mixer with the paddle attachment, beat together both sugars and butter until light in color.
- Add the eggs 1 at a time.
- Beat in the vanilla.
- On low-speed slowly add flour mixture. Stir in the raisins, nuts, and oats.
- Drop 2 tablespoons of batter for each cookie onto the baking sheets and bake for 15-18 minutes or until light golden brown.
- Cool on the sheets for a few minutes before transferring them to a wire rack.
