Spaghetti with Peas and Prosciutto (or ham)

Super quick and tasty meal for a simple lunch or dinner.

Ingredients:

  • Olive oil
  • 2 shallots, chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas, thawed
  • 4 ounces Prosciutto (or ham), diced
  • 1/2 cup chicken broth (or vegetable)
  • Salt and freshly ground black pepper
  • Cooked spaghetti

Preparation method:

  1. Heat the oil in a heavy, large skillet over medium-low heat.
  2. Add the shallots, garlic, and saute until tender, about 2 minutes.
  3. Stir in the Prosciutto (or ham) and cook for 1 to 2 minutes.
  4. Add the peas and saute until heated through for a few minutes.
  5. Add the broth and gently simmer for a few minutes.
  6. Season with salt and pepper, and serve over your favorite cooked spaghetti. Drizzle a little olive oil over pasta before serving.
