Super quick and tasty meal for a simple lunch or dinner.
Ingredients:
- Olive oil
- 2 shallots, chopped
- 2 garlic cloves, minced
- 1 cup frozen peas, thawed
- 4 ounces Prosciutto (or ham), diced
- 1/2 cup chicken broth (or vegetable)
- Salt and freshly ground black pepper
- Cooked spaghetti
Preparation method:
- Heat the oil in a heavy, large skillet over medium-low heat.
- Add the shallots, garlic, and saute until tender, about 2 minutes.
- Stir in the Prosciutto (or ham) and cook for 1 to 2 minutes.
- Add the peas and saute until heated through for a few minutes.
- Add the broth and gently simmer for a few minutes.
- Season with salt and pepper, and serve over your favorite cooked spaghetti. Drizzle a little olive oil over pasta before serving.
