Avocado Scrambled Egg

A perfect start to your day….

Ingredients for 2 slices of toast:

  • 2 large eggs beaten together
  • small knob of butter
  • 1/2 teaspoon dried chives
  • 1/2 ripe avocado
  • fresh lime
  • sliced tomato
  • 2 slices grainy brown bread toasted
  • salt and black pepper


  1. Melt the butter in a small non-stick pan over a medium heat, then add the eggs and chives.  Stir slowly with a rubber spatula or wooden spoon making sure to pull the mixture from the sides into the middle and mixing well.  As soon big soft lumps appear your eggs are ready to remove them from the heat as they will continue cooking in the pan.
  2. Scoop out the avocado and divide evenly between each slice of toast, mash and spread about (instead of butter) each slice. Sprinkle a little salt and pepper and a squeeze of fresh lime juice over the mashed avocado.
  3. Add a slice or two of tomato and then top with scrambled eggs. Again sprinkle a little salt and pepper over the eggs.  Love this with a hot cup of tea!
