Spicy Sticky Chinese Chicken Wings

 Ingredients:

  • 16 whole chicken wings, cut into 2 pieces
  • 1/3 cup sake
  • 1/3 cup soy sauce
  • 4 tablespoons brown sugar
  • 3 tablespoons mirin
  • 1/3 cup water or chicken broth
  • 3 tablespoons oyster sauce
  • 4 large thin slices of fresh ginger
  • 1 clove star anise
  • 1 teaspoon crushed red peppers
  • 1/2 cinnamon stick
  • Shaved scallions & Sesame seed, for garnish, if desired

Preparation Method:

  1. Place a large nonstick sauté pan over high heat.
  2. Add the chicken and dry-sear to lightly brown the chicken.
  3. Add the sake, soy sauce, water or broth, brown sugar, mirin, oyster sauce, ginger, star anise, crushed red peppers, and cinnamon stick, and bring to a simmer.
  4. Cover and cook for about 12 minutes.
  5. Uncover and simmer until the pan is almost dry, tossing frequently to coat the wings, 10 to 12 minutes.
  6. Serve, garnishing with scallion shavings and sesame seeds if you like.
