Scallops with Bacon and Scallions


  • 5 slices of bacon
  • Salt & pepper
  • 18 sea scallops
  • 2 tablespoon olive oil
  • 4 scallions chopped

Preparation Method:

  1. Brown bacon until crispy either in a pan or microwave; crush into small bits then set aside.
  2. Preheat a non-stick pan to a high heat for scallops.
  3. Season scallops with salt & pepper.
  4. To a very hot skillet add 1 tablespoon of olive oil and make sure base of the pan is covered.
  5. Place 9 scallops, an inch apart.
  6. Sear scallops for 2 minutes on each side or until caramelized and opaque.
  7. Transfer to a plate and cover loosely with foil.
  8. Repeat with remaining scallops.

To serve: Place scallops on a large platter and scatters over the top the chopped up scallions and bacon bits
