Oatmeal Raisin Cookies

Ingredients:

  • 1½ cups flour
  • 1 teaspoon. baking soda
  • 1/2 teaspoon salt
  • 1½ teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup unsalted butter at room temperature
  • 1 cup light brown sugar
  • ½ cup white sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla
  • 1¼ cups raisins
  • 1 cup chopped pecans
  • 3¼ cups old-fashioned rolled oats

Preperation Method:

  1. Pre-heat oven to 350 F and line cookie sheets with parchment paper
  2. In a medium bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a bowl of a stand mixer with the paddle attachment, beat together both sugars and butter until light in color.
  4. Add the eggs 1 at a time.
  5. Beat in the vanilla.
  6. On low-speed slowly add flour mixture. Stir in the raisins, nuts, and oats.
  7. Drop 2 tablespoons of batter for each cookie onto the baking sheets and bake for 15-18 minutes or until light golden brown.
  8. Cool on the sheets for a few minutes before transferring them to a wire rack.
