Irish Beef Stew

  • 2 pounds stewing beef cut into bite-size pieces
  • 1 x 12-ounce bottle/can Guinness
  • 3 sticks of celery sliced
  • 2 medium onions sliced
  • 3 carrots chopped
  • 2 leeks, washed and sliced
  • 2 tablespoons olive oil
  • 1 heaped tablespoon plain flour
  • 1 x 14-ounce can chopped tomatoes
  • 2 bay leaves
  • Salt and freshly ground black pepper
  • 1 cup frozen peas

Preparation Method:

  1. Put all the vegetables and the bay leaves into the pan with 2 tablespoons of olive oil and fry for 10 minutes.  
  2. Add your meat and flour and mix well.  
  3. Pour in the Guinness and the tinned tomatoes; give it a good stir and then season with a teaspoon of salt and pepper.
  4. Bring to the boil, put the lid on and simmer slowly for about 3 hours or until your meat is tender and falling apart.
  5. Remove the lid for the final half hour of simmering to thicken the gravy.  
  6. Add the frozen peas if using and cook for 5 more minutes
  7. Remember to remove the bay leaves before serving, and taste to see if it needs a bit more salt and pepper.

Serve with mashed or boiled potatoes and some crusty bread.

Note:  If you want to cook this stew in a slow cooker you can, it will just take a lot longer. You can also make in an oven proof casserole dish inside your oven just preheat it to 350F
