Spicy Fish Curry

  • 3 tablespoons canola oil
  • 1 large onions sliced
  • 4 garlic cloves crushed
  • 1 hot green chili sliced
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • 1 teaspoon salt
  • 4 x white fish fillets – I use Tilapia cut into bite size pieces
  • 1 cup tomato sauce or tomato passata
  • 1 cup chicken broth
Preparation Method:
  1. Heat the oil in a large pan and sauté onions, green chili, and garlic until soft.  
  2. Mix all the dry spices together and then sprinkle over the onion mixture and cook for a minute or two.  
  3. Add the pieces of fish and gently move them around so they are coated with the mixture.  
  4. Pour over the tomatoes and then add as much chicken broth as needed to cover the fish.  
  5. Give the pan a shake to a make sure the pieces of fish are covered with the sauce.
  6. Cover the pan and cook on a simmer for about 6 minutes then again give the pan a shake or gently turn the fish and cook for another 10 minutes or so.
  7. Always taste before serving and add more salt if needed.  
  8. Serve with your favorite dal, roti or rice.
