Cure all Chicken Soup


  • 1 cooked rotisserie chicken
  • 2 tablespoons butter
  • 1 large onion chopped
  • 2 carrots sliced
  • 1 long celery stick chopped into small pieces
  • 1 clove of garlic pressed
  • 2 x 32 ounces Chicken broth
  • 1 small can of condensed chicken soup
  • 1 small can sweet corn drained
  • salt and pepper

Preparation Method:

  1. Sauté onions, carrots, celery in butter until onions are golden and soft.
  2. Remove all the meat from the rotisserie chicken and dice up into small pieces and add to the sautéed vegetables.
  3. Add the garlic and cook for a couple more minutes.
  4. Add the condensed chicken soup and the chicken broth mixing well and bring to the boil. Turn down heat and simmer for about 40 minutes.
  5. Add the can of sweet corn and cook for another 10 minutes or so.
  6. Season with salt and pepper to your taste.
  7. If you want to cook it for longer you can, just keep it on a low heat.

You can add cooked pasta, noodles or rice to the finished soup before serving.
