Christmas Cookies

Ingredients for the cookie dough:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 ounces (1 stick) unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon extract

Ingredients for the icing:

  • 2 cups confectioners sugar sifted to remove any lumps
  • 2-3 tablespoons milk
  • red and green food coloring

Preparation Method:

  1. In a medium bowl, sift together flour, baking powder, and salt.
  2. In mixer beat butter until creamy, then add sugar and continue beating until light and fluffy.
  3. Beat in egg, lemon juice, vanilla and lemon extract until well-blended.
  4. Stir in flour mixture until blended and soft dough forms.
  5. Form dough into a ball and then divide into 3 pieces. Flatten each piece into a round shape and wrap each tightly in plastic wrap. Refrigerate for a few hours or overnight until dough is firm enough to handle.
  6. Preheat oven to 350 degrees. On a lightly floured surface, using a floured rolling-pin, roll out one dough ball to about 8th inch thick.
  7. Keep remaining dough in the fridge until needed.
  8. Using a floured cookie cutter cut out as many cookies as possible and transfer them to a baking sheet, 1 inch apart.
  9. Bake until cookies are colored around the edges, 8-10 minutes. Remove from baking sheet to wire racks and cool slightly. Repeat with remaining dough.
  10. Into a small bowl sift confectioners sugar. Stir in milk adding more if needed to blend into a smooth paste.
  11. Divided into two bowls and make one red the other green and use to decorate cookies
