Cheese Corn


  • 2 x 14 ounces cans sweet corn, drained
  • 2 level tablespoons flour
  • 2 tablespoons unsalted butter
  • ½ cup milk
  • 4 cheese slices plus 1 extra
  • ¼ teaspoon salt
  • 1 teaspoon cayenne pepper
  • Paprika

Preparation Method:

  1. In a medium size saucepan, over a medium heat melt butter.
  2. Add flour and mix well.
  3. Slowly add milk, a little at a time until the mixture is smooth.
  4. Add 4 cheese slices and mix until cheese melted.
  5. Add salt, cayenne pepper, corn and mix well.
  6. Pour mixture into a casserole dish; tear the last slice of cheese into small pieces and scatter over the top of casserole.  Sprinkle paprika over the top for color.
  7. Bake in a 375-degree oven for 30 minutes or until mixture is bubbly.
