Carrot Cake with Cream Cheese Frosting

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 6 ounces vegetable oil
  • 6 ounces plain yogurt
  • 1 1/3 cups white sugar
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup raisins
  • 3 large eggs
  • 12 ounces shredded carrots

Ingredients for the frosting:

  • 2 ounces butter softened
  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla essence

Preparation Method:

  1. Preheat oven 350F. Grease the bottom of a  13” X 9” baking pan then line with a sheet of parchment paper.
  2. Sift or whisk together all the dry ingredients in a large bowl then add the nuts, carrots and raisins and set aside.
  3. In your food processor pour in the oil, yogurt, sugars, and eggs and quickly blend them all together.
  4. Pour the blended liquids into the dry ingredients and gently mix everything all together. Pour in all the cake mixture into the 13×9 dish making sure there is an even layer reaching all the corners.
  5. Bake at 350F for about 35-40 minutes or until toothpick comes out clean

While your cake is cooling prepare the frosting.:

  1. Cream together the butter, cream cheese, vanilla and powdered sugar until completely blended and smooth.
  2. Once cake is finally cooled, with a knife or spatula, spread the top with frosting until cake is entirely covered.
