This is our favorite go-to appitizer, always a winner….

  • 1-pint cherry tomatoes chopped into small pieces
  • 1/4 cup finely diced onion
  • 1/3 cup finely diced celery about 2 sticks
  • 1 clove of garlic pressed thru garlic press
  • Alessi dipping spices – 30 turns of the grinder
  • Pinch of salt & pepper to your taste
  • 1 teaspoon crushed red peppers
  • 3 tablespoons extra virgin olive oil
  • Long crusty loaf of bread

Preparation Method:

  1. Into a large container mix all the ingredients, except for the loaf of bread!  
  2. Taste to check there is enough seasoning to your taste. 
  3. You can either use it now or cover and leave in the fridge for a couple of hours to chill.
  4. Slice the bread and toast until lightly brown. 
  5. Spoon the mixture onto the toast. 

Serve like that or you can top with shaved parmesan cheese or a slice of prosciutto ham. Don’t prepare it too much in advance or the toast will get soggy.
