Ingredients:
- 6 large eggs beaten together
- 2 small potatoes diced
- 1 large onion diced
- 2 tablespoons olive oil
- 1 jalapeno diced
- 1 tomato chopped up
- 1 teaspoon salt
- ¾ teaspoons turmeric
- ¾ teaspoon cumin
- 1 teaspoon of hot chili powder
Preparation Method:
- In a large pan sauté onions and potatoes in olive oil until browned about 10 minutes.
- Add the jalapeno and continue cooking until soft.
- Add all the dry spices mix well and cook for a minute then add the chopped tomatoes.
- Sauté for another 5 minutes or so until they look softened as well.
- Stir in the eggs and mix well with the potatoes mixture.
- Stir continuously as if you were making scrambled eggs.
- Once the eggs are cooked transfer the mixture to a serving bowl and enjoy!
