Bruschetta

Ingredients:

  • 1 pint cherry tomatoes chopped into small pieces
  • 1/4 cup finely diced onion
  • 1/3 cup finely diced celery, about 2 sticks
  • 1 clove of garlic pressed through a garlic press
  • 1/2 teaspoon Italian dried herb seasoning
  • Pinch of salt & pepper to your taste
  • 1 teaspoon crushed red peppers
  • 3 tablespoons extra virgin olive oil
  • A long, crusty loaf of bread

Preparation Method:

  1. Into a large container, mix all the ingredients, except for the loaf of bread!  
  2. Taste to check if there is enough seasoning to your taste. 
  3. You can use it now or cover it. Leave it in the fridge for a couple of hours to chill.
  4. Slice the bread and toast it until lightly browned
  5. Spoon the mixture onto the toast. 

Serve it like that, or you can top it with some shaved Parmesan cheese or a slice of prosciutto ham. Don’t prepare it too much in advance or the toast will get soggy.
