Ingredients:
- 1 pint cherry tomatoes chopped into small pieces
- 1/4 cup finely diced onion
- 1/3 cup finely diced celery, about 2 sticks
- 1 clove of garlic pressed through a garlic press
- 1/2 teaspoon Italian dried herb seasoning
- Pinch of salt & pepper to your taste
- 1 teaspoon crushed red peppers
- 3 tablespoons extra virgin olive oil
- A long, crusty loaf of bread
Preparation Method:
- Into a large container, mix all the ingredients, except for the loaf of bread!
- Taste to check if there is enough seasoning to your taste.
- You can use it now or cover it. Leave it in the fridge for a couple of hours to chill.
- Slice the bread and toast it until lightly browned.
- Spoon the mixture onto the toast.
Serve it like that, or you can top it with some shaved Parmesan cheese or a slice of prosciutto ham. Don’t prepare it too much in advance or the toast will get soggy.
