Super easy way to make cocktail shrimp in a hurry.
Ingredients:
- About 1 pound large shrimp, peeled, deveined but with their tails on
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 tablespoon olive oil
- 1/2 tablespoon freshly squeezed lemon juice
- If you like Old Bay, Paprika, or any other seafood seasoning sprinkle over a little as well
Preparation method:
- Preheat the oven to 400 degrees F.
- Place the shrimp on a sheet pan covered with foil and sprinkle with salt and pepper.
- Pour the olive oil and juice making sure to toss the shrimp with all the seasoning before roasting in the oven for 7 to 8 minutes.
- Transfer to a plate or container and chill for a couple of hours in the fridge.
Eat with your favorite spicy shrimp/cocktail sauce or use it in sandwiches or salads.
