Roasted Shrimp

Super easy way to make cocktail shrimp in a hurry.

Ingredients:

  • About 1 pound large shrimp, peeled, deveined but with their tails on
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon freshly squeezed lemon juice
  • If you like Old Bay, Paprika, or any other seafood seasoning sprinkle over a little as well

Preparation method:

  1. Preheat the oven to 400 degrees F.
  2. Place the shrimp on a sheet pan covered with foil and sprinkle with salt and pepper.
  3. Pour the olive oil and juice making sure to toss the shrimp with all the seasoning before roasting in the oven for 7 to 8 minutes.
  4. Transfer to a plate or container and chill for a couple of hours in the fridge.

Eat with your favorite spicy shrimp/cocktail sauce or use it in sandwiches or salads.
