Ingredients:
- 4 skinless boneless chicken breasts cut into bite-size pieces
- 3 tablespoons canola oil
- 2 large onions, peeled and sliced
- 1-inch stick cinnamon
- 6 small green cardamoms slight bashed
- 6 cloves
- 2 bay leaves
- 2 hot green chilies chopped
- 6 garlic cloves chopped
- 1 teaspoon freshly chopped ginger
- 1 teaspoon turmeric
- 2 teaspoons cayenne pepper
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 2 teaspoons salt
- 1 cup of chopped tomatoes
- ¼ cup plain yogurt
- 1 cup chicken broth
Preparation Method:
- Heat the oil in a very large saucepan and fry the onions until golden brown.
- Add all the dry spices and fry for 1 minute.
- Add the chopped ginger, garlic, and green chilies and fry for 30 seconds.
- Add the chicken pieces and fry until the chicken is browned about 5 minutes.
- Stir in the tomatoes and yogurt.
- Add about 1/2 cup chicken broth; enough to make it saucy.
- Cover and cook over a low heat for around 40-60 minutes or until the chicken is tender
